A Fresher Feeling Rather than making eating healthy a short-lived New Year’s resolution, head to Brookfield-based Cafe Manna, where owner Robin Kasch proves that nutrient-dense, plant-based foods can be just as satisfying (and tasty) as their processed, trans fat-filled counterparts. “I changed my diet from the All American diet to this (vegetarian) diet for health reasons, and I couldn’t find anything to eat,” says Kasch, referring to why she opened Cafe Manna. “Our job was to change that mind-set of people — (the mind-set) that this kind of food has to be terrible, taste like cardboard and not fill you up, because I knew differently.” And Cafe Manna’s savory sandwich does just that — marrying an assortment of hearty vegetables with house-made accoutrements like feta goat cheese spread and sun-dried tomato and basil pesto. “It is a very savory sandwich, and it’s completely balanced,” says executive chef Jordan Short. “The balsamic reduction is sweet, and the eggplant and portabella mushrooms add more of a savory flavor.” Served between two slices of kalamata olive and rosemary bread, the sandwich also features fresh spinach, tomato slices and caramelized onions. 3815 N.
