Cocktails Get Crafty A gourmet chef finds a new niche and offers her 2¢ Layla Barr is the creator of the much-lauded cocktail menu at the local favorite gastropub 2¢ Restaurant & Bar. She got her start in the industry in the culinary world, working as a baker in a gourmet food shop and then completing an apprenticeship at the prestigious Bouley Restaurant in New York City. From there, she worked with a wide variety of well-known chefs in Telluride, Santa Fe and Seattle. It was while she was in Seattle working as a pastry chef that she was offered the job of corporate pastry chef for Alonzo’s and A&B Lobster House that brought here to Key West. That was in 1997. “I was only supposed to be in Key West for six to nine months,” she says, “but I decided to stay. I had to leave after Hurricane Wilma in 2005, and I moved back three years ago to help get 2¢ up and running.” During her time away from Key West, Barr was a personal chef and nutritionist in Colorado, and took up bartending as well. It is her culinary background that influences the cocktails she creates. “My inspiration comes from various places—restaurants and bars from around the country,” she says. “I try to pair the cocktails with the food I serve as well. I have a different palate because of my experience in the culinary world, so all of the drinks and the menu are well balanced: You have your sweet, fruity tropical drink, but also something that has herbal fresh notes as well as the grownup bourbon drinks.” Barr was a forerunner in Key West of the craft-cocktail movement that is now so popular in the rest of the country. “One of the things l love about that trend is that for me, it is like cooking with liquids. I actually have a science background—I studied chemistry and biology in college— so it is interesting for me to figure out how flavors are going to pair up with each other.” She has a difficult time choosing just one, but one of her favorite cocktails is the Bang Bang Basil (recipe above), which she created from scratch, like the others offered on the menu. The unique flavors keep the customers coming back. “We have a great local following, and we tend to get travelers as opposed to tourists. I call the repeat customers visiting Key West that come into our restaurant ‘travelers’ rather than tourists, because they are people seeking out something different and unique.
